Harvest period : first week of September

Vinification : vinification in white of the grapes, cooling of the must with natural settling. Slow alcoholic fermentation at 14/16°C for 25-30 days. Aging on the lees for 3 months, light fining with bentonite and bottling with filtration and aging in the bottle for at least three months
