Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestone of Miocene origin, medium hilly location, and sub-arid climate.
Soft pressing of the grapes harvested in the coolest hours of the day, cooling of the juice, and static sedimentation for 12 hours. The clean fraction is sent to the first fermentation conducted by selected yeasts. In the following winter, the cuvèe destined for the second fermentation is assembled.
